5 Ingredient Banana Bread
It never fails, we have leftover bananas that “ew Mom they have brown spots on them” and the kids will not eat them. I hate to waste anything if at all possible. Ripe bananas can be used in many recipes and banana bread is one of them.
This recipe uses a boxed yellow cake mix. I love any recipe that is easy and quick to make and this is one of them. 5 ingredients in this banana bread if you are using chocolate chips as an added benefit!
This make two 8 inch loaf pans. I have made this without chocolate chips, with the chocolate chips and also with chopped walnuts.
Banana bread is very moist and will go bad quickly. I use one loaf immediately and wrap the second loaf in foil and place in a freezer bag and freeze until we are going to use the bread. My kids like to slice the bread, heat it slightly in the microwave with a little butter. They eat this for a snack and even for breakfast.
Frugal Cooking Tips:
- Bananas should never be wasted. Once bananas become to brown to eat, peel and add 3 bananas to one frozen ziploc bag. Freeze until use.
- Add in extra chopped nuts or sweet coconut to this recipe.
- Have leftover cooked vegetables? Mix in with cooked pasta for a tasty lunch.
- Make use of all leftovers. Dinner leftovers can be lunch the next day.

5 Ingredient Banana Bread
Ingredients
- 1 Box Yellow Cake Mix
- 3 Medium Eggs
- 1/3 Cup vegetable oil
- 4 Medium Bananas peeled and smashed
- 1 1/2 Cups Semi-Sweet Chocolate Chips (optional)
Instructions
- Preheat the oven to 350 degrees. Grease two 8 inch loaf pans.
- In a large mixing bowl, mix the dry cake mix, eggs and vegetable oil.
- Add in the mashed bananas.
- Fold in the chocolate chips.
- Divide the batter evenly between the two greased loaf pans.
- Cook for 30-40 minutes or until a toothpick inserted in the middle comes out clean.
- Cool on a rack. Slice and serve.
