Banana Bread Coffee Cake

Banana bread is a staple at my house. Never fails, I buy a bunch of bananas and we eat maybe one or two before the bananas start to get brown. If you have kids like mine, they won’t touch a banana once the outside gets a brown spot on it. And, I can only eat so many bananas.

I normally make banana bread with chocolate chips for the kids to eat. This time, I wanted to try this coffee cake recipe. 3 medium size bananas is all you need for this recipe.

The topping is not a traditional coffee cake crumb topping but it does mix in with the bread and creates little sweet pockets on the top of the bread. The end result was moist and delicious.

I preferred my piece slightly warm and a quick warm up in the microwave was all it took to warm this.

Frugal Cooking Tips:

  • Bananas should never be wasted. Once bananas become too brown to eat, peel and add 3 bananas to a freezer bag. Freeze until use.
  • Purchase flour in large bags. I always freeze my flour when I bring it home to rid it of any possible bugs. Store flour in large canning jars with lids until use.

Ingredients
  

  • 1/2 Cup Unsalted Butter softened
  • 1/2 Cup Light or Dark Brown Sugar packed
  • 1/2 Teaspoon Pure Vanilla Extract
  • 3/4 Cup Milk
  • 2 Medium Eggs
  • 3 Medium Bananas mashed
  • 1 1/2 Cup All Purpose Flour
  • 2 Teaspoons Baking Powder
  • 1 Teaspoon Ground Cinnamon
  • 1/4 Teaspoon Baking Soda
  • 1/8 Teaspoon Kosher Salt

Streusel Topping

  • 1/3 Cup Granulated Sugar
  • 1/3 Cup Light or Dark Brown Sugar packed
  • 1/2 Teaspoon Ground Cinnamon
  • 1/4 Teaspoon Kosher Salt
  • 1/2 Cup Unsalted Butter softened
  • 1/4 Cup All Purpose Flour

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, mix butter, brown sugar, vanilla extract, milk, eggs and the bananas. Set aside.
  • In a medium mixing bowl, mix the flour, baking powder, cinnamon, baking soda and salt.
  • Slowly mix the dry ingredients into the wet ingredients until the batter forms. Use a hand mixer on low.
  • Add the batter to a well greased 9x13 baking pan.
  • In a small mixing bowl, mix the ingredients for the streusel.
  • Add the streusel to the evenly to the top of the batter. If needed, form into pieces and spread these out over the top of the batter.
  • Place the baking dish in the oven and cook for 50-60 minutes or until a toothpick comes out clean from the middle.
  • Serve.
