Blueberry Orange Juice Bread

My kids love homemade Blueberry Muffin Bread. I found this recipe going through my grandma’s old recipes and I had a few oranges that the kids just had not eaten yet. I used fresh squeezed orange juice for the 2/3 cup of juice. This was about 2 oranges. No oranges around, you can use pulp free orange juice also.

The end result was a moist and delicious bread with a hint of orange. The flavor was not overpowering, but just enough. I shared the bread at work, and everyone loved it.

Frugal Cooking Tips:

  • Blueberries are easy to freeze. Best time to buy blueberries are when they are in season. The prices are at their lowest, and the flavor is out of this world. Flash freeze and then bag two cups of blueberries in quart freezer bags. I use the blueberries slightly frozen in my recipes. The blueberries hold together just a little better frozen.
  • Frozen store purchased blueberries are a good substitute for fresh blueberries.
  • Make an extra batch of bread. Wrap the extra bread in foil and place in a freezer gallon storage bag. Freeze the extra loaf until use.
  • Freeze orange juice in an ice cube tray. 3 cubes per cup of orange juice needed. Thaw before use.

Ingredients
  

  • 1 Large Egg
  • 1 Cup Granulated Sugar
  • 2 Tablespoons vegetable oil
  • 2/3 Cup orange juice
  • 1 1/2 Teaspoons Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1/2 Teaspoon Kosher Salt
  • 2 Cups All Purpose Flour
  • 2 Cups fresh or frozen blueberries

Instructions
 

  • Preheat the oven to 350 degrees. Grease a 9 inch bread loaf pan.
  • In a large mixing bowl, mix the eggs, sugar, oil and orange juice.
  • In a separate bowl, mix baking powder, baking soda, salt and flour
  • Slowly beat the flour mixture into the egg/sugar mixture until your batter forms.
  • Slowly fold in the blueberries.
  • Pour the batter into the greased loaf pan.
  • Bake for 50-60 minutes or until a toothpick stuck in the middle comes out clean.
