Cheesy Bacon Ranch Potatoes

Each fall I watch for a local store to have a sale on potatoes. They sell a 50 pound bag for $14. I know some will say “how do you use all those potatoes so quickly?”. Well, the nice thing about potatoes is you can store them in a cool dry place like the basement and they will store for months. Of course, we end up using them pretty quickly.

My kids favorite recipe is just a baked potatoes topped with cheese and bacon. And trust me, we have many baked potato bars for Sunday dinner.

We had family over and I wanted to make this side dish of Cheesy Bacon Ranch Potatoes. 5 ingredients make this recipe. Start by cooking the bacon and chopping into smaller pieces.

Next, I get the onion slices done. I prefer a sweet Vidalia onion for most of my recipes. I love the flavor of the Vidalia onion. Once you peel the skin off the onion, Cut the onion in half and then slice so you have half moon pieces.

Now onto the potatoes. I left the skins on the potatoes but you an peel them if you want. Slice or cube the potatoes anyway you choose.

Layer the ingredients in the pan: potatoes, onions, bacon, dry ranch dressing and shredded cheese. Do at least two layers.

Cover with foil and cook the potatoes until they are fork tender. I removed the foil and served the potatoes straight from the pan. And let me tell you, these potatoes were full of flavor and tasty and there were no leftovers.

Ingredients
  

  • 4 Medium Russet Potatoes washed and sliced
  • 1 Packet Dry Ranch Seasoning Mix
  • 1 Medium Vidalia Onion sliced
  • 1 12oz bacon cooked, drained and chopped
  • 2 1/2 Cups Shredded Cheddar Cheese

Instructions
 

  • Preheat oven to 400 F. Spray a 9x13 baking pan with cooking spray.
  • Spread the potatoes on the baking pan. Sprinkle with the dry ranch seasoning mix.
  • Add the bacon, onion and half the cheese to the top.
  • Cover with foil and cook for 40 minutes or until the potatoes are fork tender.
  • Remove the foil. Sprinkle with the remaining cheese and heat for an additional 5 minutes or until the cheese has melted.
  • Serve.
