Sweet Orange Juice Cake

My first time cooking this cake, I found that the cake would not come out of the Bundt pan. This was after I had already poured the glaze over the top. Once I did get the cake out, it was half in and half out. I made this cake a second time and this time, I made sure the cake would come out of the pan hole before I applied the glaze. I inverted the pan, saw that cake was able to slide out, and then inverted it back and poured the glaze over the top. Once the glaze was soaked into the cake, the pan was inverted and the cake came out perfectly!

Ingredients
  

cake batter

  • 1 Yellow Cake Mix
  • 1 3.4 oz Boxed Instant Lemon Pudding Mix
  • 3/4 Cup vegetable oil
  • 3/4 Cup orange juice
  • 4 Large Eggs

for the glaze:

  • 2 Cups powdered sugar
  • 3/4 Cup orange juice
  • 4 Tablespoons Unsalted Butter

Instructions
 

  • Preheat the oven to 350 degrees and greas and flour a 10 to 12 cup Bundt pan.
  • In a large bowl, mix the ingredients for the cake batter.
  • Pour the cake batter in the greased Bundt pan.
  • Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool. Place a plate over the top of the Bundt pan. Allow the cake to slide out of the pan, but place it back in the pan to apply the glaze.
  • In a small sauce pan, heat the ingredients for the glaze on low heat until the butter has melted.
  • Use a skewer or fork and make holes in the cake.
  • Slowly pour the glaze in the Bundt pan poking holes in the cake as you pour until all the glaze has been poured over the cake.
  • Let the cake sit for 10-15 minutes to allow the glaze to soak in the cake.
  • Place a plate over the Bundt pan and invert the cake.
  • Slice and serve.
