Bacon and Crescent Roll Casserole

Breakfast casseroles are a quick and easy option for a weekend breakfast. They are easy to make and you can use just about anything from you fridge. I have made them with hash browns, chopped potatoes, Bisquick, and refrigerated biscuits or crescent rolls. Whip everything together, cook in the oven and serve. Serve with milk or OJ and you have a meal your whole family will love.

This is a basic breakfast casserole with bacon and cheese. You can easily add chopped onions, green peppers, tomatoes and potatoes to this. Or even cooked pork sausage. The end result with be tasty!

If you want, you can cook the bacon the night before (or cook ahead and freeze for adding to meals) and assemble the casserole in the morning.  Perfect for busy school mornings, or a holiday morning.  This casserole will also work great for a brunch, morning party or early work meeting.

The best way I have found to pre cook bacon is by doing it on a great big cookie sheet in the oven. It holds it shape better, stays more flat, and it doesn’t splatter all over your arms. You also don’t have to babysit it quite like on the stove top.  We can’t wait to make it again!

Instructions
  1. In a skillet, cook the bacon. Allow the bacon to cool on a paper towel and then chop into pieces.
  2. Preheat oven to 375 degrees and grease a 13x9-inch pan.
  3. Unroll crescent roll dough and the prepared pan, sealing the seams.
  4. Sprinkle the chopped bacon and cheese over the crescent dough.
  5. In a medium bowl, whisk together the milk, eggs, salt and pepper. Pour the liquid over the cheese and bacon.
  6. Bake at 375 degrees for 35-40 minutes or until the middle is fully cooked.
  7. Serve an enjoy.
