There is nothing better than oatmeal for breakfast. Anytime I go out of town and stay in a hotel, that is my go to breakfast. It is the one food that is hard to mess up. And, you can add just about anything to the oatmeal to make it tasty. Brown sugar, maple syrup and even fresh fruit mixed in can make all the difference in flavor.
Baked Peach Oatmeal is one of these oatmeal recipes that is easy to make and comes out tasty and delicious. I have used fresh and frozen peaches for this recipe. Canned peaches could also be used if you do not have fresh or frozen available. I would use the peaches in light syrup and drain any excess liquid before using the peaches.
Add the peaches in first and then the remainder of the ingredients. Bake for 40 minutes in the oven until the middle has set and the oatmeal is ready to eat. Scoop up a warm slice making sure to get plenty of the peaches from the bottom.
The nice thing about this recipe is you can switch up the fruit on the bottom with apples or berries or a mixture of a few fruits and have a great oatmeal.
I top mine with cold milk or just a little maple syrup.
