Beef & Turkey Low-Fat Meatloaf

I didn’t realize my kids would devour my Beef & Turkey Low-Fat Meatloaf so well. I should make it more often. They came running! Why did they like it so much? The uniqueness of this recipe is that it uses both Lean Ground Hamburger and Ground Turkey. Ground Turkey is a better lean meat then even 93% ground hamburger. They are a great combo because the Turkey is a slightly different flavor and texture but you don’t taste that when you mix it with hamburger.

To be able to make it with both kinds of meat I doubled the recipe. Since Ground Turkey is only sold in one pound packages I felt it would work best to double and split in loaf pans. If you prefer you can make just half the recipe with half of both kinds of meat, or just hamburger. I have not made this recipe with only ground turkey.

My family was happy to eat up all of one loaf that night. We ate the other loaf for leftovers. Lets face it, meatloaf sandwiches are the bomb. You could also freeze the second loaf. This is also a great recipe to prep ahead of time and bake later. Once in the loaf pans, cover with press and seal. When you bake later just be sure to pull it our for a few minutes before baking so that the pan can warm up just a titch.

Tricks & Tips
One of the tricks I do with meatloaf for an easy cleanup is I use press and seal down in the bowl so that all the raw meat doesn’t stick to the bowl. Obviously you can just wash it out, but I try to keep that much raw meat out of my sink. Especially since they are both raw ground meat.

The other trick is I use either Vinyl Gloves or Nitrile Gloves for my hands to mix the recipe in the bowl. Once it’s mixed and scooped into the loaf pan I just carefully pull off and throw away. It used to be very easy to buy a box of gloves at Walmart, but currently I have to order them, thanks covid. If this is something you want to try be sure that you get powder free. I don’t use latex gloves because of the risk of allergies from it. I’ve had gloves on hand in my kitchen since I began having children. They are also great for sick kids, and when you’re cleaning.

To bake, I have not had any issue with baking two loafs at the same time. I have found that glass loaf pans like this, cook more evenly vs the metal pans. I have not used a ceramic loaf pan yet, but that will be my next try. If you feel your oven may bake one side more then the other, half way through you can open the oven and flip the loaves around. Because this has ground turkey in it, you will want the meat thermometer to reach 165 degrees. I then let the meatloaf rest for at least 10 minutes. That will help the loaf settle and stay together when you cut it.

Instructions
  1. Preheat Oven to 350 Degrees. I find the glass loaf pans are better at not allowing the sides to burn at all vs the metal loaf pans. You will need 2.
  2. You will need a large mixing bowl. Put all ingredients in it except the topping ingredients. With your hands mix the meat, liquid and spices well until everything in uniform and mixed.
  3. Scoop into the loaf pans, and pat down flat.
  4. In a small bowl mix the ketchup, brown sugar and red wine vinegar. Evenly spread on top of the loaves.
  5. Bake uncovered for 55 minutes at 350 degrees. Depending on your oven, you may want to turn these around half way through to make sure they bake evenly. `
  6. Pull out of oven. With the turkey you want to make sure it as reached 165 degrees with a meat thermometer. Then allow to sit for at least 10 minutes so it will rest and hold it's shape better.
