I just finished canning 20 quarts of pineapple. My local grocery store had fresh pineapple for $.99 each and boy where they big and juicy pineapple. I had one pineapple that I decided to just slice and eat and then I remembered a good friend telling me about these delicious little Brown Sugar Bacon Pineapple Bites that a friend brought to Christmas dinner last year. She told me they were to die for and full of flavor. She thought she ate most of the dish!

I chose to use fresh cut pineapple for this recipe. You can also use a can of chunked pineapple. Either way, the dish is delicious!

I used a thick cut bacon but a thin slice bacon would also work. I secured each slice of bacon with a toothpick to keep it in place. Make sure the bacon is wrapped tightly around the pineapple before you secure it.

The first time I made these Brown Sugar Bacon Pineapple Bites, I learned a valuable lesson. The bacon produces a lot of juices and using a pan without a lip to catch those juices is not a good idea. Needless to say, I ended up with a huge mess. The second time I made these (shortly after the first time), I used a 9×13 baking dish that was able to catch all the juices. And, allowing the juices to pool around the pineapple pieces, gives them way more flavor. The brown sugar and bacon drippings add a sweet but salty flavor to the pineapple.

I made my kids and their friends these for a snack. My oldest loved them! Her words were “they have the sweetness of the fruit plus the saltiness of the bacon”.

Brown Sugar Bacon Pineapple Bites

Sweet pineapple wrapped with tasty bacon. Infused with brown sugar and the end result is a tasty mouth popping appetizer.

Ingredients
  

  • 1 20 oz Canned PIneapple Chunks
  • 1 12 oz Sliced Bacon
  • 1/4 Cup Light or Dark Brown Sugar packed

Instructions
 

  • Remove the bacon from it's package and slice the pieces in half.
  • Take one piece of pineapple and wrap the bacon around it. Secure with a toothpick. Repeat until all the bacon has been wrapped around a piece of pineapple.
  • Add the brown sugar to a bowl. Roll each pineapple roll in the brown sugar.
  • Place each pineapple roll in a 9x13 baking dish.
  • Preheat the oven to 400 degrees. Place the dish in the oven and cook for 25 minutes.

Notes

  • The baking dish needs to have sides.  The bacon produces lots of juices as does the brown sugar.
  • If you are using larger chunks of pineapple, slice the bacon in half. If you have smaller pieces of pineapple, you can cut the bacon into thirds.
  • Make sure to secure the bacon with a toothpick. Otherwise, you risk the bacon coming off and then you have a cooked piece of pineapple and a piece of bacon.
  • Use the juices from the pan as a dipping sauce for the pineapple pieces. The sauce is full of bacon goodness and brown sugar and this adds to the appetizer.
