Coconut Pecan Sweet Potatoes

Nothing better than sweet potatoes infused with brown sugar and vanilla and tossed with coconut!

Great side dish for a family gathering or a nightly meal with your kids. Easy to make and the sweet potatoes comes out sweet and yummy!  Perfect for Thanksgiving or Christmas.  

You’ll need a 9 by 13 baking dish, pure vanilla extract, and your other pantry ingredients.

I always suggest washing your root vegetables before using them especially sweet potatoes and potatoes. So, make sure to wash any dirt off the potatoes prior to peeling and chopping. The nice thing about this recipe is you can chop the sweet potatoes, chunk the into bigger pieces, slice into thin slices or even slice into small rounds. Either way, the recipe will turn out yummy!

Instructions
  1. Preheat oven to 375 degrees.
  2. In a large mixing bowl, toss together sweet potatoes, pecans, coconut, butter, vanilla, brown sugar, sugar and salt.
  3. Pour contents in a 9x13 baking dish. Bake for 35-40 minutes.
  4. Serve warm.
