I decided to stir up a pot of Easy One Pot Goulash as I had pre-cooked hamburger with onions via the slow cooker. I enjoy this version of it because I can boil the noodles in the same pan as the rest of the goulash so it’s less mess. It’s also super easy to put together. The flavor is great and as typical with the most of my recipes, you can trade in and out what you prefer for your family. You can trade ground hamburger for ground sausage or use half of each. If you want to add some spice use a green pepper or rotel instead of just regular diced tomatoes. If you don’t have macaroni noodles on hand use, Rotini, Penne, or even egg noodles.

One of my favorite frugal methods is pre-cooking the hamburger and onions. If I have to brown hamburger for a meal I often delay for days getting around to it. Well that can end up becoming an expensive habit. I have to resort to fast food meals to feed the family. Right now with the social distancing we rarely leave the house so I’ve got to come up with a daily dinner. Keeping that large amount of hamburger cooked and frozen means I easily make better choices about our meals. With the hamburger shortages coming, this will be especially helpful. We are already stocking up on Hamburger and Sausage in our freezer. I do the pre-cooking in the slow cooker. I just make sure I stir it a few times before it’s done, drain of the grease. Now you have saved yourself a bunch of hassle for multiple meals.

My kids love this meal. We love it both warm and cold. I’m going to have to stock up on more tomatoes though. I can’t believe how many cans I have gone through these last 2 months. The joys of cooking everything from scratch.

Ingredients
  

  • 2 Pounds Ground Hamburger
  • 1 Large Yellow Onion, Diced
  • 2 Cans (14.5) diced tomatoes
  • 2 Cans (10 oz) Tomato Sauce
  • 3 Cups Water
  • 2 Bay Leafs
  • 1 Tablespoon Italian Seasoning
  • 1/2 Tablespoon Seasoned Salt
  • 2 Teaspoons Paprika
  • 1 Teaspoon Garlic Powder
  • 1/2 Teaspoon Pepper
  • 2 Cups Dry Elbow Macaroni
  • Shredded Cheddar Cheese

Instructions
 

  • Brown the Hamburger and diced onion. Drain grease once hamburger is no longer pink.
  • Add Water, Tomatoes, Bay Leafs, and spices. Bring to a boil, cover and simmer for 20 minutes. Stir occasionally to make sure the mixture doesn't stick to the pan.
  • Stir in the 3 cups of elbow macaroni. Cover on medium low for 15 minutes, stirring occasionally so they don't stick. Remove Bay leafs when the 15 minutes is up. Serve with Shredded cheddar cheese on top.
