Slow Cooker Cheesy Bacon Onion Dip

I have a few favorite dips that I like to make. This is one that I LOVE to make and try to make normally when it is just me eating it.  The color of this dip is so vibrant and it smells so amazing.

Use Vidalia sweet onions for the best flavors. After cooking the bacon, use only 2 tablespoons of the bacon drippings. Any more and you run the risk of the dip being too rich. Allow the Vidalia onions to caramelize and cook before adding them to the slow cooker.

This dip refrigerates and reheats nicely. Store the leftovers in a container. Heat up either on the stove top or in the microwave.  Slow Cooker Cheesy Bacon Onion Dip is a great dip for parties, potlucks or other events where a nice flavorful, yet slightly sweet dip is needed.

This dip works great with tortilla chips, a thick potato chip, pita chips and I’d even use various veggies to dip it.  Sliced Peppers, celery, carrots, cucumbers and cherry tomatoes would be excellent with it.  With many guests needing to be gluten free or less carb, using veggies to dip is a great way to help with that.

Crock-Pot Cheesy Bacon Onion Dip

Bacon and caramelized onions combine in the tasty dip! Serve with tortilla chips, slices of bread or corn chips to satisfy your taste buds.

Ingredients
  

  • 1 12oz bacon cooked, drained and chopped
  • 1 Large Vidalia Onion chopped
  • 2 Tablespoons Light or Dark Brown Sugar
  • 2 Cloves garlic minced
  • 1/2 Teaspoon Kosher Salt
  • 1/2 Teaspoon Fresh Ground Black Pepper
  • 1 Cup Sour Cream
  • 8oz Cream Cheese cubed
  • 1 10.5oz Diced Tomatoes with Chiles
  • 2 Cups Shredded Mozzarella Cheese

Instructions
 

  • In a medium skillet, cook the bacon. Drain and chop the bacon.
  • Drain off the bacon drippings reserving 2 tablespoons in the pan. Add the onions, brown sugar, garlic, salt and pepper to the pan and cook until the onions are caramelized.
  • Add the bacon, caramelized onion mixture, cream cheese, sour cream, mozzarella cheese, and the diced tomatoes to a 4 or 5 quart slow cooker and stir to combine.
  • Cover and cook on HIGH for 2 hours or until the cheese has melted.
  • Serve with corn chips or tortilla chips.
