Slow Cooker Tomato Basil Soup

A creamy tomato soup with a hint of basil that will please the family.  Serve with crusty bread and shredded Parmesan cheese on a cold day.

This soup is best cooked on low. My kids love tomato soup and enjoy it with grilled cheese that they can dip in the soup. I love to cook this on a weekend when the kids and I can sit at the kitchen table and talk about our week. In the summer, I use fresh tomatoes from the garden. I takes just a little longer to cook, but is well worth the wait.

Instructions
  1. Add tomatoes, tomato sauce, chicken broth, garlic, onion, bell pepper, tomato paste, oregano, sugar, salt and pepper to a 6 qt slow cooker. Crush the tomatoes with a spoon.
  2. Cover and cook on LOW for 7-8 hours.
  3. Using an immersion blender, puree until a desired consistency is reached.
  4. Add the cream and basil and mix well.
  5. Serve with shredded parmesan cheese and crusty bread.
