  1. Preheat the oven to 350 degrees.
  2. In a small mixing bowl, mix eggs, sugar, oil and vanilla extract.
  3. In a large mixing bowl, mix flour, baking soda and baking powder.
  4. Add the small mixing bowl liquid ingredients to the large mixing bowl.
  5. Add the last two ingredients (cinnamon and grated zucchini) to the mixture.
  6. Add the batter to a well greased bread loaf pan. You will have enough for 2 loafs.
  7. Cook for 45-50 minutes until the top is golden brown and the middle has set.
  8. Cool on a wire rack for 10-15 minutes. Remove the bread from the loaf pan.
  9. Slice and enjoy.
