Slow Cooker Italian Pork Chops & Potatoes
Slow Cooker Italian Pork Chops & Potatoes was a fun recipe that I put together. I had a huge bag of large potatoes I needed to use up. My youngest daughter did the famous science project where you make potatoes light up a light bulb (it totally worked!), and thus we had lots of extra potatoes after her project was finished. We pulled some pork chops out of the freezer to thaw and I went to work.
I decided to add the butter so that the pork chops would be tender. The onions provide moisture, but the potatoes, don’t provide too much, so I needed a good way to ensure we wouldn’t have dry meat and burnt potatoes. The butter worked perfectly, the Italian Dressing Mix wasn’t overpowering. We basically had a one pot meal, my favorite!

Slow Cooker Italian Pork Chops & Potatoes
Ingredients
- 8-10 Pork Chops boneless will work better (mine had bones)
- 3 Large Russet or Idaho Potatoes Scrubbed and large cubed/chunks
- 1 Yellow Onion Peeled and large cubed/chunks
- 1 package Italian Salad Dressing Mix
- Salt and Pepper
- Butter
- Cooking Spray
Instructions
- Spray the Slow Cooker with cooking spray
- Combine in a mixing bowl the large cubed potatoes, onions, salt and pepper to taste and 2 Tablespoons of butter melted.
- In the slow cooker lay the 4-5 pork chops at the bottom. Place 3 small pats of butter on the chops. Use a 1/3rd of the Italian dressing mix and sprinkle it over the pork chops.
- Do another layer of the pork chops with 3 pats of butter and then a 1/3rd of the Italian Dressing Mix sprinkled over it.
- Pour the potato/onion cubes over the pork chops and sprinkle the last of the Italian Dressing Mix over the potatoes. Cover and cook on low for 6-7 hours. High for 4 hours.
