Slow Cooker Pork Chops with Onions

I am a huge fan of caramelized onions. My favorite way to make them is on the grill. Wrap two sliced Vidalia onions, a little brown sugar and some butter in foil and let the grill do the work. They are great on hot dogs, hamburgers and of course steak. But, they are also delicious cooked with a good pork chop.

I did a short stint working as a manager of a grocery store. There, I learned some ins and outs of what is possible in the meat department. Now, I search for a good price on a pork loin. I look for anything local at $1.29/pound and if I can find it at $.99/pound, I get a couple full loins. The butcher will slice the loin how you want it. I get half the loin in thick sliced boneless pork chops and leave the other as a loin for pull apart or a good slow cooked pork tenderloin in the slow cooker.

I prefer to use Vidalia onions as they are my favorite type of onion for most recipes. You can substitute a yellow onion and still have a tasty recipe.

The pork chops come out moist and delicious.  Remember, cook pork to an internal temperature of 145 degrees. Serve these over mashed potatoes, egg noodles or even white or brown rice. Make sure to top with a good spoonful of the onions and the juices.

Ingredients
  

  • 4 whole Pork Chops
  • 2 Tablespoons Worcestershire Sauce
  • 2 Tablespoons Light or Dark Brown Sugar
  • 1 Tablespoon Apple Cider Vinegar
  • 1 Large Sweet Onion sliced
  • 1/4 Teaspoon Salt
  • 1/4 Teaspoon Fresh Ground Black Pepper
  • 1/4 Teaspoon Garlic Powder
  • 1/8 Teaspoon Red Pepper Flakes
  • 1/4 Cup Unsalted Butter cut into tabs

Instructions
 

  • In a medium mixing bowl, mix Worcestershire sauce, apple cider vinegar, brown sugar, salt, pepper, garlic powder, and red pepper flakes. Pour this liquid into the bottom of a 4 qt or 5 qt slow cooker.
  • Add the pork chops on top of the sauce. Then the onions and butter tabs.
  • Cover and cook on LOW for 4-6 hours.
