Baked Peach Oatmeal

Peaches and oatmeal combine for this easy to make and tasty baked oatmeal that is great for breakfast.

Ingredients
  

  • 2 Cups Old Fashioned Rolled Oats
  • 1/4 Cup Brown sugar
  • 1/2 Teaspoon Kosher Salt
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Ground Cinnamon
  • 2 Cups Milk
  • 1 Large Egg
  • 3 Tablespoons Unsalted Butter melted and cooled
  • 1 1/4 Teaspoons Pure Vanilla Extract
  • 1 1/2 Cups Fresh or Frozen Peaches chopped

Instructions
 

  • Preheat the oven to 350 degrees. Grease an 8x8 square baking dish and set aside.
  • In a medium bowl, mix together the oats, brown sugar, baking powder, salt and cinnamon.
  • In another medium bowl, whisk together the milk, egg, melted butter, and vanilla.
  • Arrange the chopped peaches on the bottom of the prepared baking dish.
  • Pour the dry ingredients over the peaches and spread them evenly.
  • Pour the liquid ingredients over the top of the dry ingredients. Use a spoon to make sure all the dry ingredients come in contact with the liquid ingredients.
  • Place the pan in the oven and bake for 40 minutes until the top is golden and the oatmeal is set.
  • Allow to cool for 5 minutes and slice into squares.
  • Serve in a bowl with a little milk around the sides.

Notes

*sliced fresh peaches or canned peaches can be used for this recipe. Drain the liquid from the canned peaches before using.
