White Bean Soup with Kale

Full of goodness in this easy to make vegetarian soup. White beans, onion, carrots and kale in every bite.

Ingredients
  

  • 1 Tablespoon olive oil
  • 1 Medium Yellow Onion diced
  • 1 Medium Carrot peeled and diced
  • 1 Celery Rib diced
  • 2 Cloves garlic minced
  • 1/4 Teaspoon Chili Flakes
  • 1 Sprig rosemary minced
  • 2 15 oz White Beans drained and rinsed
  • 4 Cups Vegetable Stock
  • Pinch Kosher Salt
  • Pinch ground black pepper
  • 3 Cups Kale packed

Instructions
 

  • Heat the olive oil, garlic and onions in a 3 qt or 4 qt saucepan over medium heat until onion is softened., about 5 minutes.
  • Add vegetable stock, beans, carrots, celery, rosemary, chili flakes, sat and pepper.
  • Bring to a boil. Reduce heat and add in the kale. Simmer an additional 20 minutes until kale is tender.
  • Serve and enjoy1

Notes

Remove the ribs from the kale with a sharp knife. Bunch the kale up together and chop.
