Cheesy Gnocchi Broccoli Soup

- 1 14.5 oz Reduced Sodium Chicken Broth or Vegetable Broth
- 1 Medium Russet Potato cleaned, peeled and diced
- 2 1/2 Cups Milk
- 1 16 oz Potato Gnocchi
- 1 10 oz Frozen Broccoli Florets chopped
- 1 8 oz Smoked Gouda chopped
In a 5 qt or 6 qt stock pot, add the chicken broth or vegetable broth, milk and the chopped potato. Heat over medium heat for 20-30 minutes.
Use a potato masher and mash the potato pieces in the pan.
Add the remaining ingredients and bring to a boil.
Reduce heat to low and stir until the cheese has melted and mixed in with the other ingredients.
Serve in bread bowls or with a side of hard crust bread.
