Slow Cooker Tomato Basil Soup
A creamy tomato soup with a hint of basil that will please the family. Serve with crusty bread and shredded Parmesan cheese on a cold day.
This soup is best cooked on low. My kids love tomato soup and enjoy it with grilled cheese that they can dip in the soup. I love to cook this on a weekend when the kids and I can sit at the kitchen table and talk about our week. In the summer, I use fresh tomatoes from the garden. I takes just a little longer to cook, but is well worth the wait.
If you don’t have fresh tomatoes available, the Canned Whole Peeled Plum Tomatoes work great. I try to keep a few cans on hand in my pantry because you just never know when you will want to make soup, stew or chili and they work perfectly! I also try to keep Tomato Paste, Tomato Sauce and Chicken Broth on hand. I don’t want to be caught in a situation where I would have to run to the store to satisfy a craving or to frantically get dinner on the table. It’s one of the ways I try and be frugal as well. I look for sales and coupons when I can find them.
