- 3 pound beef chuck roast
- 2 pounds Potatoes cut into large cubes
- 1 teaspoon Kosher Salt
- 1 teaspoon ground black pepper
- 1 large Yellow Onion sliced
- 5 cloves garlic minced
- 3 cups beef stock
- 1 tablespoon dried roasemary
- 1 tablespoon Dried Oregano
- 1 tablespoon dried bail
- 1/2 teaspoon Fresh Thyme
- 1/2 teaspoon dried marjoram
- 1/4 teaspoon dried sage
Using a 5qt or larger slow cooker, add the onions, pot roast and potatoes in that order.
In a bowl, mix all the spices and sprinkle on top of the pot roast and potatoes.
Pour the beef stock in and around the pot roast.
Cover and cook on LOW for 8-10 hours.
Serve.
