Cheesy Gnocchi Broccoli Soup

This is one of the soups on my quest to make one soup every week. I love a good soup and always need something for my lunches during the week. I like that I can heat soup up and eat it on the go if necessary as it seems that I eat and walk at the same time while working and never really sit down. 

Smoked Gouda cheese is one of my favorite cheeses to add to a creamy soup. One of our local small town restaurants serves soup that is out of this world. The cook uses Smoked Gouda in her soups and if you do not get there early enough, well you miss out on the soup for the day.

The Smoked Gouda adds a rich flavor that is not too overpowering. Smoked Gouda is also easy to melt and blends in nicely with the other liquid of the soup. I find Smoked Gouda in the deli specialty section of my store.

I used packaged gnocchi for this Cheesy Gnocchi Broccoli Soup.  If you have trouble finding gnocchi in your store, I always find it in with the dry noodles.

Cheesy Gnocchi Broccoli Soup

Smoked Gouda flavors this soup. 6 Ingredients in this easy and tasty recipe. Serve with French bread.

Ingredients
  

  • 1 14.5 oz Reduced Sodium Chicken Broth or Vegetable Broth
  • 1 Medium Russet Potato cleaned, peeled and diced
  • 2 1/2 Cups Milk
  • 1 16 oz Potato Gnocchi
  • 1 10 oz Frozen Broccoli Florets chopped
  • 1 8 oz Smoked Gouda chopped

Instructions
 

  • In a 5 qt or 6 qt stock pot, add the chicken broth or vegetable broth, milk and the chopped potato. Heat over medium heat for 20-30 minutes.
  • Use a potato masher and mash the potato pieces in the pan.
  • Add the remaining ingredients and bring to a boil.
  • Reduce heat to low and stir until the cheese has melted and mixed in with the other ingredients.
  • Serve in bread bowls or with a side of hard crust bread.
